BUTTER TARTS, makes 48
THE FILLING
2Eggs
2tbspSoft margarine
1-1/2cupBrown sugar
2tspVanilla
1pinchSalt
2/3cupPecans
Mix to a creamy texture. Save the pecans to add later.
THE CRUST
8ozCream Cheese
1-1/3cupButter (2-2/3 sticks)
2-2/3cupsFlour
Updated 12/20/17; multiply by 1-1/3 to match filling.

Soften the cheese and butter then mix in flour. Shape into 1 inch balls and pat into mini muffin tins.

Fill with filling mixture to about 2/3 full and top with a pecan half. (12/20/17, chopped pecans and added to crust before filling)

Bake at 325 degrees for 25 minutes or until set. Allow to cool and store in refrigerator.
